I bought a Chef XL KVL4100S two weeks ago after researching a fair bit. I start making my first pizza dough, a fairly standard NY style pizza though from the Stadler Made calculator. I attach the dough hook that originally came with the KVL4100s, the titanium one with bayonet shaft. I turn on the mixer and the titanium dough did such a pathetic job that I was very close to returning the mixer as a whole. It didn’t develop any gluten at all and a bunch of dough was stuck on the bottom, my biggest fear. So I went online and saw that people (who know stuff about dough and gluten development) had the same problem and most if not all recommended a spiral dough hook and I found it here on Amazon.This spiral dough hook is an absolute 10/10 and I’m just gonna throw the titanium weirdly shaped dough hook that came with the mixer in the bin.Get this if you want a dough hook that develops gluten. Fits a Chef XL KVL4100.
