...and super sharp! So when you're using a mandoline slicer like this, you need to be ULTRA careful. I have learned my lesson. Better to toss the last bit of whatever you're slicing into your mouth than to carve off a slice of finger. Been there; done that. That being said, this is a very neat slicer. You adjust the opening with a screw. You can slice tissue thin with this... it's very adjustable. The best part is that once you've fully retraced the blade, it can't cut you anymore, so you can safely store it in a drawer without worrying about accidentally reading in and snagging yourself on a razor sharp kitchen utensil. If I ever splurged on a truffle, I'd use this to shave it with. Anything less would be uncivilized.All joking aside, it's got a wide utility in your kitchen. This maybe would not be ideal for potatoes, for instance, but anything on the smaller size is going to turn out perfectly.

À l'origine c'est pour faire de très fines tranches de truffe mais moi je l'ai acheté pour faire des très fines tranches 2 fromages la pâte dure ( roue de fromage trop grande pour mettre sur un friseur à fromage). C'est un peu comme si vous passez votre fromage à la mandoline ça vous fait de très fine tranche pour les décorations de vos plats et autres. Très beau produit et qu'il fonctionne très bien attention la l'homme coupe très fort c'est pour cela qu'il y a un petit réglage pour que vous puissiez avoir l'épaisseur à votre goût.

When I received my truffle shaver, the quality of the product becomes apparent and it is worth spending the little bit more than other shavers on Amazon. It shaved my black truffles beautifully from super thin to a slightly chunkier thickness. All this is done via the screw adjustment attached. The wooden handle which I believe is rosewood feels lovely and is very comfortable to hold. All in all, I am very pleased with my purchase and look forward to using it on other items like vegetables and also cheese.
