I normally buy Japanese kitchen knives, as they are lighter and sharper than those from Europe. However, when it comes to opening Oysters only an over-engineered German knife will do. This oyster knife won't break when opening the hinge and is sharp enough to sever the oyster from the shell. It's a great product. Shame these knives are no longer made in Sheffield...
