Der Teig aus diesem Mehl? Ein Gedicht. So fluffig, dass ich fast ein Kissen daraus gemacht hätte. Der Boden? Knusprig wie ein sizilianischer Sonnenuntergang. Und der Geruch? Just did a 24 hour proof BIGA at room temp, and a few more hours once the last bit of flour and water added. Was way too windy to get the ooni out so just did a chorizo and onion pizza in oven at max temp. The crust rose WAY more than expected and the next time ill be pressing out the base much further to the edge of the dough. Was a light and airy crust and the base resisted sogginess very well.
